Chocolate Bread Pudding

Large or small family this dessert is a sure winner.  I tripled the ingredients to meet the demands of 10 kids (2 staying on respite).  Amazing what you can do with a loaf of bread!

 

Ingredients:

6 thick slices of white bread, remove the crusts.

450ml milk

175ml evaporated milk (can)

2 tbsp cocoa powder

2 eggs

2 tbsp dark muscovado sugar

1 tsp vanilla essence

icing sugar, for dusting.

Instructions

1. Layer ovenproof dish (greased) with squares of bread.

2. Combine milk, evaporated milk and cocoa powder in a saucepan and heat gently.  Stir occasionally until lukewarm.

3. Whisk eggs, sugar and vanilla essence together.  Add the warm milk mixture and beat well.

4. Pour into oven dish, covering the bread evenly. Cover the dish with cling wrap and chill for 1-2hrs

5.  Bake the pudding in a preheated oven (remember to remove cling wrap first!)  180˚C for 35-40 minutes, until set.  Remove and allow to stand for minutes.   Dust with icing sugar.

Hot Fudge Sauce

55g plain chocolate, broken into pieces

1 tbsp golden syrup

5g butter

2 tbsp dark muscovado sugar

150ml milk

1 tbsp cornflour

Instructions: Combine chocolate, cocoa powder, syrup, butter, sugar, milk and cornflour into a saucepan.  Heat gently, sir constantly until smooth.

 

Finally, pour hot chocolate sauce with chocolate pudding and ENJOY.

      Oh Robyn I recently saw a coffee recipe for croissants too I can imagine chocolate would have been very YUM.

    That looks like a great recipe – easy, inexpensive, and you could do a large amount for a crowd. I made a similar chocolate bread and butter pudding using brioche and a tub of nutella. Not one for every night, but memorable!

      It was easy and yes it fed a lot. Perhaps a bit rich for my liking but others loved it.
